Ingredients

  • 1 stick oleo
  • 1 cup powdered sugar
  • 1 cup crushed pineapple
  • 2 small packages cherry jello

Instructions

  1. Line a long dish with coconut cookie bars.
  2. Cream 1 stick of oleo and 1 cup of powdered sugar until smooth; spread evenly over the cookie layer.
  3. Drain the crushed pineapple and spread it over the creamed mixture.
  4. Place another layer of coconut cookie bars over the pineapple layer.
  5. Prepare 2 small packages of cherry jello and partially set it, then spread over the cookie layer.
  6. Chill until the jello is firm, then spread with a layer of Cool Whip before serving.
