Coffee Ground Salad

Ingredients

  • 1 pkg. lemon gelatin
  • 1 small carton cottage cheese
  • 1 small can crushed pineapple

Instructions

  1. Dissolve gelatin in 1 cup hot water.
  2. Drain pineapple (use juice and add enough water to make 1/2 to 3/4 cup).
  3. Add to gelatin.
  4. Let partially set.
  5. Add pineapple, cottage cheese and Cool Whip; fold in.
  6. Line container with crushed chocolate cookies (which resemble coffee grounds).
  7. Place the gelatin mixture carefully on the cookies.
  8. Let stand for at least 2 hours.
  9. Serves 9.
