Coffee Ground Salad

Instructions
- Dissolve gelatin in 1 cup hot water.
- Drain pineapple (use juice and add enough water to make 1/2 to 3/4 cup).
- Add to gelatin.
- Let partially set.
- Add pineapple, cottage cheese and Cool Whip; fold in.
- Line container with crushed chocolate cookies (which resemble coffee grounds).
- Place the gelatin mixture carefully on the cookies.
- Let stand for at least 2 hours.
- Serves 9.
