Cold Corn Salsa

Ingredients

  • 1 large bag frozen corn, thawed
  • 1 red onion, chopped
  • 1 red or green pepper, chopped
  • 1/2+ c. mint or cilantro

Instructions

  1. Mix together corn, onion, pepper, mint and tomatoes.
  2. Blend in oil, lemon/lime juice and cumin.
  3. Chill overnight.
  4. Stir occasionally.
  5. Add chopped jalapenos for a real Mexican flavor. Fantastic with grilled marinated chicken.
