Cold Pickled Beets

Ingredients

  • 1 (No. 2) can beets
  • 1/2 c. sugar or 2 packets Equal
  • 1/2 c. liquid (drained from beets)
  • 1/4 tsp. salt
  • 1/2 c. vinegar

Instructions

  1. Drain beets, reserving 1/2 cup juice to dilute vinegar.
  2. Put sliced beets in a jar; sprinkle with salt and sugar or Equal. Heat vinegar and beet juice until boiling.
  3. Pour over beets. Cool.
  4. Keep in refrigerator several hours before serving.
  5. Will keep a week or longer.
  6. Fresh thin sliced onion rings may be added, if desired.
  7. Can also be made in a dish.
