Cold Spinach Soup

Instructions
- In large frying pan, melt butter and saute scallions. Transfer to large bowl and add spinach, potato soup, chicken broth, lemon juice, salt and pepper.
- Puree in blender or food processor.
- Put back into bowl and stir in cream and sour cream. Chill at least 8 hours.
- Garnish with chopped parsley and/or lemon rind.
- Serves 8.
