Ingredients

  • 1 can tomatoes
  • 5 medium onions
  • 3 large cloves garlic
  • 5 cans Great Northern beans
  • 3 cans chopped collards (or fresh if you have them)
  • 2 cans sliced potatoes (or leftovers if available)
  • 2 large ham hocks

Instructions

  1. Taste fruit for salt because all canned has salt.
  2. Pepper to taste and add a few dashes of hot sauce.
  3. Use 5 or 6 chorizo (Spanish sausage).
  4. If sausage is not available, use pepperoni. Start with tomatoes, ham hocks, onions, sausage, garlic and beans. Cook about 30 minutes.
  5. Add all other ingredients.
  6. Bring to a boil.
  7. Decrease heat and simmer 3 hours.
