Ingredients

  • 1 1/2 cups cottage cheese
  • 1/4 cup frozen mixed vegetables, thawed or fresh diced carrots, celery and green pepper
  • 1 lettuce leaf

Instructions

  1. Mix the thawed or fresh vegetables into the cottage cheese.
  2. Scoop the mixture with an ice cream scoop onto the lettuce leaf.
  3. Serve with a slice of Carrot-Raisin Bread.
