Ingredients

  • 1 doz. ears fresh corn or 4 cans whole kernel corn, drained
  • 1/2 c. onions, chopped
  • 1/2 c. bell pepper, chopped
  • 1/2 c. celery stalk, chopped
  • 1 clove garlic, chopped
  • 1/2 c. oil
  • 1 can Ro-Tel tomatoes or whole tomatoes

Instructions

  1. Saute onion, bell pepper, celery and garlic in oil until tender.
  2. Drain corn and add with 1 can Ro-Tel tomatoes; cook 45 minutes, covered, on medium heat, stirring often to prevent sticking.
