Corn Mexican-Style
Ingredients
- 2 tablespoons Crisco Butter Flavor All-Vegetable Shortening ⓘ
- 3 cups corn kernels fresh or frozen and thawed ⓘ
- 1/2 teaspoon paprika ⓘ
- 1/2 teaspoon salt ⓘ
- 1/4 teaspoon cayenne pepper ⓘ
- 1/4 teaspoon pepper ⓘ
- 2 tablespoons chopped fresh cilantro ⓘ
- 1 tablespoon fresh lime juice ⓘ
- 1 teaspoon grated lime peel finely ⓘ
Instructions
- HEAT shortening in large skillet over medium heat. Add corn and stir-fry 2 minutes.
- STIR in paprika, salt, cayenne pepper and pepper. Remove from heat. Just before serving stir in cilantro, lime juice and lime peel. Top with cheese.
