Corn-Onion Shortcake

Ingredients

  • 1/4 c. oleo
  • 1 1/2 c. cornbread mix
  • 1 egg
  • 1/3 c. milk
  • 1 c. cream-style corn
  • 1/2 tsp. salt
  • 1 c. (4 oz.) shredded mild Cheddar
  • 1 large chopped onion

Instructions

  1. In pan, melt oleo and saute onion until it's transparent.
  2. Set aside and drain.
  3. In bowl, combine cornbread mix, milk, egg and corn.
  4. Mix well.
  5. Add drained onion.
  6. Spoon into a greased 9-inch baking pan.
  7. Spread cheese over batter.
  8. Bake at 425° for 30 minutes.
  9. Cut into squares and serve.
  10. This is soooo good!!
