Corn Pudding(8 Servings)

Ingredients

  • 4 c. drained corn (fresh, frozen or canned)
  • 3 Tbsp. flour
  • 2 Tbsp. sugar
  • 1 tsp. salt
  • 1/4 tsp. pepper
  • 2 Tbsp. chopped green pepper
  • 4 large eggs
  • 2 c. milk
  • 1/2 c. butter or margarine

Instructions

  1. Mix corn, flour, sugar, seasoning and green pepper.
  2. Beat eggs until light.
  3. Add to corn mixture.
  4. Add milk.
  5. Melt butter in a 2-quart casserole as you preheat oven to 350°.
  6. Tilt casserole to coat sides with butter.
  7. Stir in corn mixture.
  8. Place in shallow pan of warm water.
  9. Bake for 1 hour or until firm.
  10. This dish can be prepared hours in advance and reheated, covered, for 30 minutes in a shallow pan of water in a slow oven.
  11. Toasted almonds (slivered), mixed with chopped pimentos, make a delicious relish to serve with this dish.
