Corn Saute

Ingredients

  • 1 1/2 c. finely chopped onion
  • 1 c. diced green pepper
  • 3 Tbsp. butter
  • 4 1/2 to 5 c. fresh corn, cut from cob
  • 1/2 c. light cream
  • 1/2 tsp. thyme
  • salt and pepper to taste

Instructions

  1. Saute 1 1/2 cups finely chopped onion and 1 cup diced green pepper in 3 tablespoons butter for just a few minutes.
  2. Add 4 1/2 to 5 cups fresh corn cut from the cob and 1/2 cup light cream. Season with 1/2 teaspoon thyme and salt and pepper to taste. Cover and cook until corn is tender.
  3. Makes 8 servings.
