Ingredients

  • 1 cup almond flour (OR 1/2 c almond flour & 1/2 c hazelnut flour)
  • 1 teaspoon baking powder
  • 2 eggs, beaten
  • 2 tablespoons cream
  • 2 tablespoons water
  • 1/4 cup butter, melted
  • 1 teaspoon Splenda sugar substitute or 1 teaspoon honey, substitute

Instructions

  1. Preheat oven to 350 Combine the almond meal and baking powder.
  2. Add the cream, water, sweetener, and eggs, stir to combine.
  3. Add the melted butter, stir to combine.
  4. Spray Pam into the muffin tin.
  5. Divide the batter amongst 5-6 muffins.
  6. Bake for 15-18 minutes until edges are slightly browned and the tops are firm to the touch.
  7. Really good with butter& sugar-free, low carb jam or honey.
