Ingredients

  • 8 cups cornmeal or 7 cups cornmeal and 1 cup flour
  • 3 tablespoons baking powder
  • 4 teaspoons salt
  • 1/2 cup sugar
  • 1/2 cup shortening

Instructions

  1. Sift and measure the cornmeal and flour.
  2. Add baking powder, salt, and sugar to the cornmeal mixture and sift together.
  3. Cut in the shortening until the mixture is fine grained.
  4. If using buttermilk, add 2 teaspoons of baking soda to the recipe and use only half the amount of baking powder.
  5. To prepare the batter, add 1 egg and 1/2 cup of milk for each cup of mix and stir until well blended.
  6. Pour the batter into well-greased muffin tins or a 9 x 9-inch pan.
  7. Bake at 400°F (200°C) for 25 to 30 minutes until golden brown.
