Ingredients

  • 2 qt. chopped green bell pepper
  • 2 qt. chopped green tomatoes
  • 2 qt. chopped cucumbers
  • 2 c. chopped onion
  • 1 c. chopped red bell pepper
  • 3 c. vinegar
  • 1 to 2 hot peppers, chopped
  • 4 c. sugar
  • 2 c. water
  • 6 tsp. pickling salt

Instructions

  1. Wash peppers, remove seeds and core.
  2. In a 6 to 8-quart boiler, combine sugar, vinegar, water, and pickling salt.
  3. Bring to a boil.
  4. Add all ingredients and bring to a boil for about 5 minutes.
  5. Place a clove of garlic in each hot, sterilized pint jar.
  6. Fill jars to 1/2-inch of top, using plenty of liquid when filling.
  7. Remove air bubbles.
  8. Wipe jar tops and threads clean.
  9. Place hot lids and bands on jars and screw tight.
  10. Process in boiling water canner for 5 minutes to seal.
