Cornmeal-Fried Catfish

Ingredients

  • vegetable oil for frying
  • whole dressed catfish
  • 3/4 c. cornmeal
  • 1/4 c. all-purpose flour
  • 1/4 tsp. salt
  • 1/2 c. milk
  • 2 eggs, beaten
  • 1/8 tsp. red pepper sauce

Instructions

  1. Heat oil (2 to 3 inches) in Dutch oven to 350°.
  2. Rinse catfish and pat dry.
  3. Refrigerate until ready to use.
  4. Mix cornmeal, flour and salt in large bowl.
  5. Stir in milk, eggs, pepper sauce and 2 tablespoons vegetable oil until well blended.
  6. Coat fish with cornmeal batter, shaking off any excess.
  7. Fry fish until golden brown, turning once, if necessary.
  8. Drain on paper towels.
  9. Keep warm in 275° oven.
