Ingredients

  • 1 gal. medium size cucumbers
  • 1 c. plain salt
  • 2 Tbsp. alum
  • 2 Tbsp. water
  • white vinegar
  • 2 tsp. pickling spice
  • 6 c. sugar

Instructions

  1. Wash and dry cucumbers, then put them in a jar.
  2. Dissolve salt in cold water enough to cover the cucumbers and let stand for 4 days.
  3. Drain off the salt water.
  4. Wash the cucumbers 3 times.
  5. Slice cucumbers into chunks or thick slices and put back into the jar.
  6. Add alum and enough water to cover the cucumbers. Let set for 24 hours.
  7. Drain and rinse the cucumbers 3 times.
  8. Put the cucumbers back in the jar.
  9. Cover with white vinegar and let set for 10 days.
  10. Drain off the vinegar and discard it.
  11. Add 2 teaspoons pickling spice tied in a cloth.
  12. Add 3 cups sugar and shake or stir to combine.
  13. Add 3 more cups sugar after 2 days, shaking after each addition.
  14. Cover with a lid and store on the counter.
