Countertop Sweet Pickles
Crunchy, sweet, and tangy homemade pickles with a balanced blend of spice and sweetness, perfect for snacking or adding flavor to sandwiches and salads.

Instructions
- Wash and dry cucumbers, then put them in a jar.
- Dissolve salt in cold water enough to cover the cucumbers and let stand for 4 days.
- Drain off the salt water.
- Wash the cucumbers 3 times.
- Slice cucumbers into chunks or thick slices and put back into the jar.
- Add alum and enough water to cover the cucumbers. Let set for 24 hours.
- Drain and rinse the cucumbers 3 times.
- Put the cucumbers back in the jar.
- Cover with white vinegar and let set for 10 days.
- Drain off the vinegar and discard it.
- Add 2 teaspoons pickling spice tied in a cloth.
- Add 3 cups sugar and shake or stir to combine.
- Add 3 more cups sugar after 2 days, shaking after each addition.
- Cover with a lid and store on the counter.
