Ingredients

  • 2 lb. ham
  • 5 lb. potatoes
  • 2 dozen eggs
  • 1 c. milk
  • salt to taste
  • pepper

Instructions

  1. Preheat a 14-inch Dutch oven.
  2. Cut ham into 1-inch cubes.
  3. Place ham in the Dutch oven and fry for 10 to 15 minutes.
  4. Remove the ham, leaving the drippings in the oven.
  5. Scrub the potatoes and slice them with skins on.
  6. Place potato slices in the heated Dutch oven.
  7. Brown and cover potatoes, cooking for 20 to 30 minutes.
  8. Return ham to the Dutch oven and mix with potatoes.
  9. In a bowl, scramble the eggs with milk, salt, and pepper.
  10. Add the egg mixture to the ham and potatoes in the Dutch oven.
  11. Stir until the eggs are cooked, then cover and cook for 10 minutes.
