Ingredients

  • about 15 inches rainbow trout
  • 6 strips bacon
  • 1 onion
  • 1 can corn
  • 1 small jar pimentos

Instructions

  1. Catch enough rainbow trout (about 15 inches long) from a mountain lake for a meal.
  2. Prepare an open fire and cook the trout over the flames until done.
  3. In a large cast-iron skillet, cook 6 strips of bacon until about half done.
  4. Add chopped onion to the skillet and cook until browned.
  5. Drain off the bacon grease from the skillet.
  6. Add a can of corn and a small jar of pimentos to the skillet.
  7. Cook the corn mixture until hot.
  8. Serve the cooked trout with the corn mixture on the side and enjoy.
