A hearty bean casserole with smoky bacon, sweet onions, and tangy ketchup-vinegar sauce, perfect for comforting family dinners or potlucks.

Ingredients

  • 1 can pork and beans
  • 1 can lima beans with ham
  • 1 can golden butter beans
  • 1 can red kidney beans
  • 1/2 lb. bacon
  • 3 c. sliced onions
  • 1/2 c. catsup
  • 1/2 c. vinegar
  • 3/4 c. brown sugar
  • 1 tsp. garlic salt
  • 1/2 tsp. dry mustard

Instructions

  1. Drain the butter beans and red kidney beans.
  2. Partially fry the bacon until crisp, then remove from the pan.
  3. Drain off all but 2 tablespoons of fat from the pan.
  4. Sauté sliced onions until tender, then add catsup, vinegar, brown sugar, garlic salt, and dry mustard. Simmer for 20 minutes, stirring occasionally.
  5. Combine the sauce with the drained beans and cooked bacon.
  6. Transfer the mixture to a baking dish and bake in a 350°F oven, covered, for 50 minutes.
  7. Uncover and bake for an additional 10 minutes before serving.
