Ingredients

  • 2 c. pinto beans
  • 4 c. water
  • 3 to 4 cloves garlic
  • 1 onion
  • 3 to 4 green chili peppers
  • salt
  • cayenne pepper

Instructions

  1. Soak pinto beans overnight.
  2. Combine all ingredients except salt and cayenne in a pot.
  3. Bring to a boil; cover and reduce heat to simmer.
  4. Cook until beans are tender.
  5. Add salt and cayenne pepper in the last 45 minutes of cooking.
  6. Can be cooked in a slow cooker for up to 48 hours.
