Ingredients

  • 2 chicken cutlets or 2 large whole breasts without skin
  • 1 can whole berry cranberry sauce
  • 2 cloves garlic
  • 3 Tbsp olive oil
  • 4 or 5 oz mushrooms
  • 4 scallions
  • 1/2 cup dry white wine
  • uncooked rice

Instructions

  1. Cut the chicken cutlets or whole breasts in half.
  2. Slice the mushrooms into thick slices.
  3. Mince the garlic.
  4. In a skillet, saute the garlic in warm olive oil until soft.
  5. Add the chicken and cook quickly on both sides without browning.
  6. Cut the scallions into 1/2-inch pieces and add to the skillet, stirring until soft.
  7. In a mixing bowl, stir together the cranberry sauce and white wine.
  8. Add the cranberry-wine mixture to the skillet.
  9. Cover and simmer for about 10 minutes or until the chicken is no longer pink in the center.
  10. Add the mushrooms and stir to moisten.
  11. Cook for a few more minutes until the sauce is bubbly.
  12. Serve over cooked rice.
