Cranberry Walnut Salmon

Ingredients

  • cooking spray
  • 8 6 oz salmon fillets
  • 1 tsp salt
  • 1 Tbl paprika
  • 2 tsp ground cumin
  • 1/2 tsp cinnamon
  • pinch ground nutmeg
  • 1/2 cup coarsely chopped walnuts
  • 1 tbl olive oil
  • 1 small shallot, finely chopped
  • 1/2 cup freshly squeezed OJ
  • 1/4 cup honey
  • 1/2 cup dried cranberries
  • 1/8 tsp cayenne pepper

Instructions

  1. preheat oven 375
  2. lightly spray jelly-roll pan with cooking spray
  3. in small bowl, mix salt,paprika,cumin,cinnamon and nutmeg
  4. rub spice mix on each fillet
  5. place in jelly roll pan-bake 15-20 minutes until flakes easily
  6. toast nuts in saucepan over medioum heat 5 minutes, stirring continually until light brown and fragrant-remove from pan-set aside
  7. heat oil in small saucepan over medium heat
  8. add shallots-cook 1 minute
  9. reduce heat to low-add OJ and honey
  10. cook about 10 minutes until sauce is thickened and syrupy.
  11. add cranberries and cayenne pepper, stir until combined
  12. remove from heat-add nuts
  13. to serve, top salmon over your choice of steamed or sauteed greens-spoon topping over salmon
