Crawfish Corn Chowder

Ingredients

  • 1 large onion, chopped
  • 3 celery sticks, thinly sliced
  • 4 bell peppers, chopped
  • 1/2 lb. butter
  • 3/4 c. flour
  • 1 lb. crawfish tails and fat
  • 3 small cans creamed corn
  • 3 potatoes, boiled and cubed
  • salt, white and black pepper to taste
  • 1/2 gal. milk
  • 2 pt. whipping cream

Instructions

  1. Saute onion, celery and bell pepper in butter.
  2. Add flour; cook five to ten minutes.
  3. Add other ingredients plus 1/2 gallon milk and two pints whipping cream.
  4. Add crawfish and simmer.
