Ingredients

  • 3 cups sugar
  • 3 tablespoons white syrup
  • 1/8 teaspoon soda
  • 1 cup water
  • 1/2 pint whipping cream

Instructions

  1. In a large (8-quart) pan, mix sugar, syrup, soda, and water.
  2. Bring to a boil until the mixture bubbles freely.
  3. Insert a thermometer into the mixture, ensuring it doesn't touch the bottom of the pan.
  4. Slowly add the whipping cream all around the pan, avoiding pouring it all in one place.
  5. Continue boiling until reaching the hard boil stage (260°F).
  6. Do not stir during this process.
  7. Pour the hot mixture onto a buttered marble slab or heavily buttered cold platter.
  8. Allow it to cool until manageable, then pull the candy until creamy white and it holds its shape (about 20 minutes).
  9. Cut with scissors and place in a dish to set further. Butter your hands and remove all rings before handling.
