Ingredients

  • 10 3/4 oz. pound cake (2 pieces)
  • 1 qt. orange sherbet, softened
  • 1 c. heavy cream
  • 1/4 c. sugar
  • 1 tsp. vanilla extract

Instructions

  1. Line the bottom and two long sides of a 9 x 5 x 3-inch loaf pan with waxed paper.
  2. Cut the pound cakes into three even slices, place them in the prepared pan, and trim remaining slices to fit.
  3. Pack the softened orange sherbet into the cake-lined pan, then top with the remaining slice of pound cake.
  4. Cover with waxed paper and freeze for at least 3 hours.
  5. In a bowl, combine heavy cream, sugar, and vanilla extract; beat until stiff peaks form.
  6. Spread the whipped cream over the frozen cake.
  7. Return to freezer and freeze until ready to serve.
