- Line the bottom and two long sides of a 9 x 5 x 3-inch loaf pan with waxed paper.
- Cut the pound cakes into three even slices, place them in the prepared pan, and trim remaining slices to fit.
- Pack the softened orange sherbet into the cake-lined pan, then top with the remaining slice of pound cake.
- Cover with waxed paper and freeze for at least 3 hours.
- In a bowl, combine heavy cream, sugar, and vanilla extract; beat until stiff peaks form.
- Spread the whipped cream over the frozen cake.
- Return to freezer and freeze until ready to serve.
