Ingredients

  • 3 medium potatoes
  • salt to taste
  • pepper to taste
  • 1/4 cup chopped celery
  • 1 can whole kernel corn, drained
  • 1/2 teaspoon basil leaves
  • 2 cans milk

Instructions

  1. Cook, salt, and boil the potatoes.
  2. Drain the potatoes, reserving the water.
  3. Dice the potatoes into about 2 cups.
  4. In a large saucepan, melt butter and stir in the chopped celery.
  5. Saute until the celery is tender.
  6. Add the corn, diced potatoes, 1 1/2 teaspoons salt, basil leaves, and pepper.
  7. Cover and heat for 10 minutes.
  8. Add milk and the reserved potato water, if needed, to make 1 2/3 cups.
  9. Heat the chowder until thoroughly warmed.
