- Melt butter in a large skillet on high heat. Add onion and garlic; cook 2-3 mins, until onion is tender.
- Add chicken livers; cook 5-7 mins, until brown and cooked through. Transfer to a food processor. Add cream cheese and cognac or brandy. Season to taste. Process until smooth. Fold in thyme leaves. Spoon into a bowl. Cover with plastic wrap.
- Refrigerate 3 hours or overnight. Sprinkle with additional thyme and serve with crackers.
