- In large saucepan, cover beans with water and soak overnight. Bring to boil and
- cook two minutes. Remove from heat. Cover and let stand 1 hour. Add tomatoes, onion, green peppers, garlic, bay leaf, salt, thyme and pepper. If necessary, add water to cover. Bring to a boil. Cover and simmer 1-1/2 to 2 hours or until beans are tender, adding more water if beans are dry.
- Remove bay leaf and serve with rice. Serves 4.
