Ingredients

  • 5 slices bacon, chopped
  • 1 large onion, chopped
  • 1.5 lb. yellow squash, sliced
  • 1/2 cup chopped tomato
  • 1 teaspoon Creole seasoning

Instructions

  1. Cook chopped bacon in a skillet for 5 minutes.
  2. Add chopped onion and cook for 7 minutes or until lightly brown.
  3. Add sliced yellow squash, chopped tomato, and Creole seasoning.
  4. Cover and simmer for 20 minutes or until squash is tender.
