Ingredients

  • 3/4 cup melted shortening
  • 1 cup brown sugar
  • 6 cups flour
  • 4 teaspoons baking soda
  • 1 tablespoon lemon extract
  • 1 cup molasses
  • 1 cup sour milk or buttermilk
  • 1/2 teaspoon salt
  • 2 teaspoons apple pie spice

Instructions

  1. Mix melted shortening, molasses, and brown sugar until smooth.
  2. Stir in sour milk or buttermilk.
  3. Sift together flour, soda, salt, and apple pie spice; add to the wet mixture.
  4. Add lemon extract and mix to form a smooth, stiff dough.
  5. Chill the dough until firm.
  6. Roll out a portion of dough on a floured surface to a thickness of 1/8 inch.
  7. Cut into shapes with a floured cutter.
  8. Place on a greased baking sheet and bake at 375°F for 8 to 10 minutes.
  9. Wrap baked cookies in waxed paper or plastic wrap and chill well.
  10. Slice into 1/4-inch pieces and bake at 350°F until brown.
