Ingredients

  • 2 fish fillets (cod or catfish)
  • low sodium Ritz crackers, crushed
  • 1 Tbsp. oleo
  • 1 tsp. lemon juice

Instructions

  1. Dip the fish fillets in oleo and lemon juice mixture.
  2. Press the coated fillets into crushed Ritz crackers to coat evenly.
  3. Spray a cookie sheet with low-fat spray to prevent sticking.
  4. Place the coated fillets on the prepared sheet.
  5. Bake at 400°F (200°C) for 25 to 30 minutes until golden and cooked through.
