Crispy Walnut Chicken

Ingredients

  • 3 c. crispy rice cereal
  • 1/2 c. walnuts
  • 1/2 c. melted butter
  • 1/2 tsp. salt
  • 1/2 tsp. pepper
  • 3 lb. chicken pieces, skinned

Instructions

  1. Process cereal and walnuts until crumbs are fine.
  2. Combine butter, a dash of garlic powder, salt and pepper; stir well. Dredge chicken in butter mixture, then in cereal mixture.
  3. Arrange chicken in jelly roll pan.
  4. Pour any remaining butter over chicken.
  5. Bake at 350° for 1 hour.
  6. Serves 6.
