Chicken Caesar Burgers
Ingredients
- 1 1/3 lbs lean ground chicken
- 3/4 cup fresh breadcrumbs ⓘ
- 1/4 cup chopped flat-leaf parsley ⓘ
- 4 slices bacon ⓘ
- 4 None hamburger buns, split ⓘ
- 8 None baby Romaine lettuce leaves ⓘ
- 4 None hard-boiled eggs, sliced
- None None FOR THE CAESAR DRESSING ⓘ
- 1/3 cup mayonnaise ⓘ
- 1 clove garlic, crushed ⓘ
- 2 None anchovies, finely chopped
- 1/4 cup shredded Parmesan cheese, plus additional 2 tbsp, to serve
Instructions
- Combine ground chicken, breadcrumbs and parsley in a large bowl. Season to taste. Shape into four patties. Wrap each patty in a slice of bacon. Place on a plate. Cover with plastic wrap and refrigerate for 30 mins.
- Meanwhile, for the caesar dressing, combine all ingredients in a small bowl. Season to taste.
- Heat a large nonstick skillet on medium-low heat. Spray patties with no stick cooking spray. Cook patties for 6-8 mins each side, until browned and cooked through. Place on paper towels. Let stand for 5 mins; cover to keep warm.
- Lightly toast cut sides of buns. Drizzle a little caesar dressing over bun bottoms. Top with lettuce, chicken patties, egg, additional caesar dressing and Parmesan cheese, and bun tops. Serve.
