Crock-Pot Bean Chowder
Ingredients
- 1 pkg. dried large lima beans ⓘ
- 1 large onion, chopped ⓘ
- 2 bell peppers, chopped ⓘ
- 1 c. chopped celery
- 2 large potatoes, cubed in 1/2-inch pieces ⓘ
- 1 can tomatoes (Creole) ⓘ
- 1 medium clove garlic, minced ⓘ
- 1 large can cream of chicken soup ⓘ
- 2 soup cans water ⓘ
- 1 bottle Hormel bacon bits ⓘ
- 2 tsp. Creole seasoning (more or less according to taste)
Instructions
- Wash and drain lima beans.
- Place in large crock-pot.
- Add all the other ingredients; mix well.
- Cook for 4 hours on high, then for 4 hours on medium.
- Serve with cornbread.
- Yields 6 to 8 servings.
