Ingredients

  • 2 lb. beef cubes
  • oil
  • 1 large onion, chopped
  • 2 potatoes, cubed
  • 2 carrots, sliced
  • 1 qt. frozen lima beans, thawed
  • 1 qt. stewed tomatoes
  • 1 to 1 1/2 tsp. salt
  • 1/4 to 1/2 tsp. pepper

Instructions

  1. Brown beef on all sides in oil in skillet. Place in slow cooker. Layer onions, potatoes, carrots and lima beans over beef. Mix tomatoes and seasonings together in bowl. Pour over meat and vegetables. Cover. Cook on low 8 to 10 hours.
