Ingredients

  • 8 lb pork roast
  • zest of 1 orange
  • 1 garlic clove
  • 3 to 4 Tbsp rosemary

Instructions

  1. Heat oven to 425°F and position the rack in the lower half of the oven.
  2. Season the pork roast with salt and pepper.
  3. Brush the meat with 4 tablespoons of olive oil.
  4. Place the roast in a heavy-duty roasting pan with a rack, ensuring it's large enough not to crowd the sides.
  5. Roast the pork for 15 minutes at 425°F.
  6. Reduce the oven temperature after 45 minutes of roasting.
  7. Continue roasting until the meat is well browned and a meat thermometer registers 170°F to 180°F, about 1½ to 2 hours.
  8. Spread the season mixture, including orange zest, garlic, and rosemary, over the meat inside and out.
