- Peel, cut up, and boil the potatoes until tender.
- Drain the potatoes and whip with sour cream and milk until they reach a creamy mashed potato consistency.
- Saute the green onions (tops included) in butter until translucent.
- Add the sautéed green onions, bacon bits, 3/4 cup of grated Cheddar cheese, salt, pepper, and garlic salt to the potato mixture and mix well.
- Pour the mixture into a buttered 3-quart casserole dish.
- Sprinkle the top with the remaining Cheddar cheese.
- Bake at 350°F for approximately 30 minutes or until bubbly.
