Creamy, cheesy potato casserole with green onions and bacon bits, perfect for family dinners or potlucks, offering comforting flavors and a crispy cheesy topping.

Ingredients

  • 10 medium red potatoes
  • 1/4 cup milk
  • 1 bunch green onions
  • 1 cup (8 oz) extra sharp Cheddar cheese, grated
  • 16 oz sour cream
  • 1 stick margarine
  • 1/2 large bottle Bac*Os bacon bits
  • Salt

Instructions

  1. Peel, cut up, and boil the potatoes until tender.
  2. Drain the potatoes and whip with sour cream and milk until they reach a creamy mashed potato consistency.
  3. Saute the green onions (tops included) in butter until translucent.
  4. Add the sautéed green onions, bacon bits, 3/4 cup of grated Cheddar cheese, salt, pepper, and garlic salt to the potato mixture and mix well.
  5. Pour the mixture into a buttered 3-quart casserole dish.
  6. Sprinkle the top with the remaining Cheddar cheese.
  7. Bake at 350°F for approximately 30 minutes or until bubbly.
