Ingredients

  • 1/3 cup oleo
  • 3/4 cup crushed corn flakes
  • 1 1/2 cups shredded sharp cheddar cheese
  • 2 teaspoons salt
  • 1 1/2 teaspoons paprika
  • 3 to 4 large potatoes, sliced 1/2-inch thick

Instructions

  1. Melt the oil in a jelly roll pan in a preheated 375°F oven.
  2. In a bowl combine the crushed corn flakes, shredded sharp cheddar cheese, salt, and paprika.
  3. Slice the potatoes 1/2-inch thick and dip each slice in melted butter, then coat with the corn flake mixture.
  4. Arrange the coated potato slices in a single layer in the pan.
  5. Bake for about 30 minutes, or until the tops are crisp and the potatoes are tender.
