Ingredients

  • 4 medium-sized tomatoes
  • Dijon-style mustard
  • salt
  • pepper
  • cayenne pepper
  • 6 Tbsp. melted butter or margarine
  • 1/2 cup Ritz cracker crumbs or seasoned breadcrumbs

Instructions

  1. Cut the tomatoes in half.
  2. Spread the cut side with Dijon-style mustard.
  3. Sprinkle with salt, pepper, and cayenne pepper to taste.
  4. Combine melted butter, cracker crumbs, and Parmesan cheese.
  5. Place the tomatoes on a baking sheet and spoon the crumb mixture over the cut sides.
  6. Broil until the topping is golden and crusty.
