Ingredients

  • 1 large bundle violets
  • 1 lb. caster sugar
  • 1 c. water

Instructions

  1. Remove violet heads from stalks.
  2. Wash very carefully and pat dry with paper towel.
  3. Put sugar and water into a saucepan over medium heat and bring to a boil.
  4. Heat until syrup reaches 240°F/120°C on a thermometer.
  5. Continue to boil for one minute. Reduce heat and drop in flowers, a few at a time.
  6. Leave to simmer for one minute.
  7. Remove carefully with a slotted spoon.
  8. Drain well and place on a sheet of foil to cool.
  9. Turn the violets at least once.
  10. Store in an airtight tin.
