Ingredients

  • 2 squirrels
  • chopped onion
  • chopped celery
  • chopped bell pepper
  • 3/4 to 1 cup rice

Instructions

  1. Brown the squirrels in an iron pot.
  2. When browned, pour off excess grease and add chopped onion, celery, and bell peppers; then sauté.
  3. Cover with water and cook until the squirrel meat is tender.
  4. Add rice to the squirrel and gravy mixture. Ensure the gravy has 2 to 2 1/2 cups of liquid.
  5. Cover and cook on low heat for about 30 minutes until the rice is done.
  6. Stir once or twice during cooking.
