Cucumber Mold

Ingredients

  • 1 pkg. lime jello
  • 3/4 c. hot water
  • 1 onion, grated (use juice)
  • 2 large cucumbers, grated
  • 1 pt. cottage cheese
  • 3/4 c. salad dressing (Miracle Whip)
  • 1 large cucumber, sliced thin

Instructions

  1. Mix cottage cheese, grated cucumbers, onion, salad dressing, season to taste, salt and red pepper.
  2. Dissolve jello in hot water; cool.
  3. Add to cottage cheese mixture.
  4. This amount fills small mold.
  5. Put layer of jello in cold; let thicken slightly, then lay slices of cucumber overlapping in jello mixture.
  6. Put back in refrigerator until firm.
  7. Pour cottage cheese mixture over cucumber slices; return to refrigerator until firm.
