Cucumber-Olive Appetizers

Ingredients

  • 1 large cucumber (unpeeled, skin washed)
  • 0.5 (8 ounce) cream cheese, softened
  • 1/4 cup bleu cheese salad dressing (or to taste)
  • 1 small garlic clove, finely minced (may omit if desired)
  • 1 loaf sliced rye cocktail bread (1-pound loaf, can use dark pumpernickle)
  • sliced pimento-stuffed green olives (use as many slices as needed)

Instructions

  1. Slice the unpeeled cucumber into 1/4-inch slices/rounds.
  2. In a small bowl combine the cream cheese with blue cheese salad dressing and garlic powder.
  3. Spread onto each slice of cocktail bread.
  4. Top with a slice of cucumber and an olive slice.
  5. If desired but it is not necessary you may place one colored toothpick through the olive and down into the bread.
  6. Place onto serving platter/s.
