Ingredients

  • 1/2 medium cucumber, pared and shredded
  • 1/8 tsp. salt
  • 3 oz. frozen cooked tiny shrimp, thawed
  • 2 Tbsp. light sour cream
  • 1 1/2 tsp. chopped fresh dill or 1/4 tsp. dill weed

Instructions

  1. In a small mixing bowl, combine the shredded cucumber and salt; let stand for 10 minutes.
  2. Place the cucumber in the center of a clean kitchen towel. Gather the corners to enclose the cucumber in a pouch.
  3. Squeeze the pouch to release excess liquid from the cucumber, discarding the liquid.
  4. Transfer the drained cucumber to a medium mixing bowl.
  5. Add the thawed shrimp, sour cream, and chopped dill. Stir to combine.
  6. Serve on cocktail bread, crisp breads, or rice cakes.
