Ingredients

  • 1 cup self-rising cornmeal
  • 1 cup self-rising flour
  • 1/4 teaspoon red pepper
  • 2 eggs
  • 2 tablespoons milk
  • 24 ounces oysters, drained
  • Vegetable oil

Instructions

  1. Combine the self-rising cornmeal, self-rising flour, and red pepper in a bowl, stirring well.
  2. In a separate bowl, beat the eggs and milk together until well blended.
  3. Dip each oyster into the egg mixture, then dredge in the flour mixture to coat thoroughly.
  4. Pour vegetable oil into a Dutch oven to a depth of 2 to 3 inches.
  5. Heat the oil to 375°F (190°C).
  6. Fry the coated oysters in the hot oil until golden brown, turning once to cook evenly.
  7. Drain the fried oysters on paper towels to remove excess oil.
