Ingredients

  • 4 c. thinly sliced, peeled cucumbers
  • 1/2 tsp. salt
  • 1/4 c. cider vinegar
  • 1 garlic clove, minced
  • 1/4 c. crumbled Feta cheese
  • 1/4 c. yogurt
  • 1/4 c. sour cream
  • 1 tsp. Dijon style mustard

Instructions

  1. Place the cucumbers in a colander; sprinkle with salt.
  2. Weight the cucumbers with a heavy plate; let them drain for 1 hour, then transfer to a large bowl.
  3. Combine the remaining ingredients in a bowl.
  4. Pour the dressing over the drained cucumbers.
  5. Toss well to coat evenly.
  6. Serve chilled.
