Ingredients

  • 3 medium cucumbers, peeled and thinly sliced
  • 2 tsp. salt
  • 1 Tbsp. vegetable oil
  • 1 Tbsp. vinegar
  • 1 tsp. sugar
  • dash of pepper
  • 2 Tbsp. sliced green onions
  • dash of paprika

Instructions

  1. Place cucumbers in a strainer.
  2. Sprinkle with salt; let stand for 30 minutes, tossing occasionally.
  3. Rinse and drain well.
  4. In a bowl, combine the oil, vinegar, sugar and pepper; add the cucumbers and stir well.
  5. Sprinkle with onions and paprika. Refrigerate until serving.
  6. Makes 4 servings.
