Cumin Rice Casserole

Ingredients

  • 1 c. uncooked rice
  • 1/3 c. chopped onion
  • 1/4 c. chopped green pepper
  • 2 Tbsp. bacon fat
  • 2 cans condensed consomme or bouillon, boiling hot
  • 3/4 tsp. salt
  • 3/4 tsp. cumin seed

Instructions

  1. Heat rice, onion and pepper in bacon fat until golden brown. Combine in 2-quart casserole with remaining ingredients.
  2. Cover tightly.
  3. Bake in moderate oven (350°) about 30 minutes or until rice is tender.
  4. Makes 4 to 6 servings.
