Curry Beef

Ingredients

  • 2 lb. stew beef
  • 1 medium onion
  • 5 large cloves garlic
  • 3 Tbsp. curry powder
  • 1 tsp. pepper
  • salt to taste
  • 1/2 c. coconut milk
  • 3 c. water
  • 2 or 3 medium potatoes, cut up

Instructions

  1. Wash and trim beef; set aside.
  2. Cut onion and garlic; put oil in pressure cooker; add garlic and let fry until brown.
  3. Add onion and fry one minute. Add beef and a little salt, fry until light brown.
  4. Add water.
  5. Cover cooker and let it pressure for 10 minutes.
  6. Put cooker under cold tap water.
  7. When the steam is gone, open cooker.
  8. Put it back on the stove.
  9. Add curry, potatoes, pepper, coconut milk and salt to taste.
  10. Cook until potatoes are tender.
  11. Serve on rice.
